Following on from our nutritional advice about apples in February (Six Brilliant Reasons to Eat Your Daily Apple), we thought we’d share our delicious recipes of the month.
RECIPES OF THE MONTH
Carrot, Red Cabbage and Apple Salad recipe
Makes 4 Lunches
This is a perfect autumn-at-work salad. Crunchy and bright, it’s appealing to the eyes and to the appetite! Serve on its own or with some cold, thinly sliced roast chicken.
What you’ll need
3 large carrots, peeled, then grated
½ red cabbage, finely shredded
2 apples, any variety, thinly sliced
juice of half lemon
sesame seeds
white vinegar
olive oil
salt and pepper to taste
Gently toss the apple slices and lemon juice in a large bowl to prevent browning. Add grated carrot and shredded cabbage, plus 1 tablespoon sesame seeds, toss gently. Add 1 tablespoon each olive oil and white vinegar plus salt and pepper to taste. Enjoy immediately.
Chicken Waldorf Sandwich
Serves One
Apples in a savoury sandwich may sound strange, but they add a sweet, crisp crunch not to mention an extra dose of healthiness!
What you’ll need
2 slices thick multi-grain bread
½ Granny Smith Apple, sliced thinly with skin on
small handful thinly sliced celery
sprinkle of chopped walnuts
2 slices of cooked chicken
freshly chopped tarragon (optional)
1½ tsps S&W Whole Egg Light Mayonnaise
Spread the mayo thinly on the bread and layer ingredients to taste. Slice sandwich in half and tuck in with gusto!
